I found this recipe in a Southwest Airlines magazine on my way to Houston. When I made the drink for my brother in law, he said that he was SURE he’d had the drink before at the Denver airport. When I pulled out the recipe, sure enough, it was from Root Down Denver! 🙂
🔸1.5oz beet-infused gin
🔸3/4oz ginger liqueur
🔸1 oz lemon
🔸6-8 mint leaves
Infuse roughly-chopped beets in gin for 24+ hours. Strain and add all other ingredients together. Shake, strain, and serve! Garnish with mint.
