Whenever I can find fresh figs in the grocery, I snatch them up. They taste delicious but they’re also one of my favorite fruits to photograph in cocktails. To make this cocktail, I used my Flavor Thesaurus to come up with fig flavor pairings.

- 3 dried figs chopped into small pieces
- 1 oz freshly-squeezed lime juice
- 2 oz gin
- .75 oz ginger liqueur (Like Domaine de Canton)
In your shaker, take the dried figs and use a stick blender to blend them with the gin. Sieve out the solids and add the other ingredients with ice. Shake and serve in a coupe glass with fresh figs + pickled ginger as a garnish.
