  • In addition to making cocktails with super seasonal ingredients, I love experimenting with obscure spirits and liqueurs in cocktails. Living in New York, this is easier than most places, but it's still a bit of an adventure and trek to track down all of the things I'd love to try.

The folks at @wine_com just launched a spirits section on their site in New York, New Jersey, Florida and they gave me a free year of their StewardShip program to try out the process. (California coming soon!) Usually shipping wines and spirits is heavy and expensive, but the StewardShip program is like Amazon Prime. For my first order, I picked up a Dutch bitter called Cloosterbitter that is said to be like a "poor man's green Chartreuse," an aquavit that we always use at our @barkbox Danish Christmas lunch, a celery root liqueur, and some @chinola passion fruit liqueur. (See my stories to see all the bottles!) I tried adding the passion fruit liqueur to a salty dog yesterday and it was the perfect antidote to a dreary February morning.

🔸1.5oz vodka
🔸1oz @Chinola Passion Fruit Liqueur
🔸4oz Grapefruit Juice
🔸Rim glass with  salt and powdered hibiscus

Add all ingredients except salt to a shaker with ice and shake. Strain and serve over a large ice cube.

  • I went through a phase of making shrubs a couple years ago and just rediscovered them recently as a way to add fresh fruits and rooty flavors to cocktails. This winter has been a lot of experiments with celeriac, but I thought beets would be good for February. 🙃

❤️Heart Beet❤️
🔸2oz tequila
🔸3/4oz homemade beet shrub
🔸1/4 oz lime juice
🔸1:1 Salt & Sugared rim for garnish

🍒Beet Shrub🍒
🔸5 beets, cut into small chunks
🔸½ cup apple cider vinegar
🔸½ cup distilled white vinegar
🔸1 cup granulated sugar
🔸1 tsp. black peppercorns
🔸1 tsp. kosher salt
🔸Tools: blender, rubber spatula, mesh strainer
.
Add the beets and both vinegars to a blender and purée. Using a rubber spatula, press the purée through a mesh strainer into a medium bowl; you should have 2 to 3 cups of liquid. Add the beet-vinegar liquid, sugar, peppercorns and salt to a nonreactive container; cover and let steep for 1 day at room temperature. Taste for seasoning; if you prefer the taste to be more peppery, let the mixture steep for another day. Strain through a mesh strainer and bottle; store in the refrigerator (the flavor will fully develop after a week), and use within 2 months.

  • Last Sunday Sean and I did a bit of a taco tour in East Harlem and found some tacos that were Mexico City street-style. 🙏✨🙌 After our taco tour, I went into one of the groceries in East Harlem and picked up these fresh guavas to use in cocktails. I am perpetually grateful to live in a city where I can find such a diversity of produce and ingredients to play with in drinks. When I looked in the @theflavorbible to see what pairs well with guava, curry came up so I added it to the drink. Definitely a do-over!

🍈Fresh Guava Curry Margarita🍈
(Also works with rum, cachaca)
-2oz tequila
-.75oz lime juice, or Meyer lemon!
-.75oz simple syrup
-1 guava, peeled
-splash of orange juice or pineapple juice
-Dash of curry powder
.
Add peeled guava and tequila to a blender and blend. Using a fine mesh strainer, strain out all the solids. Then add the remaining ingredients with a handful of ice back to the blender and blend! Serve frozen in a lowball or rocks glass rimmed with pink peppercorn and salt.

  • My terrace garden is totally depressing right now, but there ARE still fresh and seasonal ingredients alive outside right this moment. 🙏🙌Spruce and pine have green tips that come out in the spring and they make the most delicious syrup but cedar in the winter is still quite good. I used cedar from my backyard in Indiana in this drink but spruce, Douglas fir, and pine all make wonderful syrups in the same process. Make sure that your tree has not been treated with chemicals!!! (!!!!!)

🌲Backyard Cedar Collins🌲
Also works with: Vodka, whiskey
-2oz gin
-1oz cedar simple syrup
-.75oz lemon juice
-.75oz white cranberry juice
-Soda to top
.Directions:
Add your spirit, cedar simple syrup, lemon juice, and cranberry juice to a shaker with ice. Shake vigorously and strain into an old-fashioned glass with a large ice cube. Top with soda water, garnish with a cedar twig. TIP: Freeze cedar + cranberries in cubes for an extra garnish.

🌲Cedar Simple Syrup:🌲
-1 cup sugar
-1 cup water
Generous handful of cedar twigs with healthy greenery
Directions: Heat water, sugar, and cedar in a small pot until sugar is completely dissolved. Remove from heat and steep cedar until cool. Strain solids and store the syrup in the refrigerator for up to 3 weeks.

💨 Cinnamon-Smoked Old-Fashioned 💨
-2oz Cognac
-.25oz simple syrup
-1 dash aromatic bitters
-1 dash orange bitters -1 LG Craft Ice Sphere
.
Add all ingredients to a mixing glass with Craft Ice and stir. Pour over a Craft Ice sphere. Put the entire glass in a smoking hut or a smoking cloche and smoke. If you don’t have a smoking cloche, no problem! Just char a piece of cinnamon on an old plate or a piece of untreated wood and place your glass on top to trap the smoke. ✨

  • Today I'm mixing some wintry kumquat cocktails at the Kitchen & Bath Industry Show with the folks at @lgusa to showcase the InstaView Refrigerator with Craft Ice! The last time I worked on some cocktails with LG was back in the summer for their event in NYC, but it's an honor to come out to Las Vegas to mix up some cold-weather drinks using the dreamy ice rounds. (Seriously have pined for this refrigerator every time I squelched out a large ice cube from my silicone molds while making cocktails this fall.😂)

My cocktail for KBIS centers on kumquats because I wanted to celebrate the diverse varieties of citrus that are in season right now. Citrus is such a quirky category of fruit, I love playing with its ranges of color, acidity, odd shapes, and sourness. For this drink, I paired kumquats with elderflower and rosemary... because even winter cocktails deserve to be a bit extra.

🍊Kumquat, Rosemary, and Elderflower Collins🍊
-Also works with: Vodka, rum, whiskey
-3 Kumquats for muddling
-1.5oz gin
-.5oz elderflower liqueur
-3/4oz fresh lemon juice
-Rosemary sprig for muddling, 1 sprig for garnish
~2oz club soda
-Sliced kumquats, rosemary sprig, edible flowers for garnish

Directions: Muddle kumquats and rosemary in the gin. Build drink in a highball with LG Craft Ice Rounds, top with soda. Garnish aggressively, citrus is only in-season so long! :P
  • Whenever we get Harry and David gift boxes at work around the holidays, I love swiping the pears. Especially the heirloom Royal Riviera pears wrapped in gold. It wasn’t until I learned about these pears that I started to realize not all pears are created equal- kind of like farmer’s market heirloom tomatoes vs grocery store tomatoes. HUGE difference in flavor!

This cocktail uses puréed pears from the farmer’s market and it is so much better because of them. :)

🍐 Golden Pear 🍐
-Also works with: Gin / Tequila / Whiskey / Vodka
-2oz white rum -1oz lemon
-.5oz simple syrup
-1oz fresh pear puree with a pinch of fennel and/or thyme
.
Directions: To make the pear puree, blend a quartered pear with a bit of water and a pinch of fennel and/or thyme. Strain puree through a fine mesh strainer, using a spoon to stir the pulp and speed up the process. Add 1 ounce purée, your spirit, lemon, and simple syrup with a handful of ice to a shaker. Shake, strain, and serve over ice. Garnish with thyme and a pear slice.

  • I went to the Morningside Heights farmer’s market last weekend to see what was available to make a winter cocktail with winter produce. (Other options were carrots, oysters, lots of pickles. 🤓) I used @theflavorbible book to check which flavors pair well with celery and settled on apple, allspice, and lemon.

This is one of those drinks where I asked Sean to take a sip and he said, “Whoa- you made this up?? What did you do?” 😂

🥬Winter CeleryBration 🥬
🔸 Also works with: Rum, London Dry Gin, tequila
🔸 2oz celery root-infused vodka
🔸 .5oz lemon juice
🔸 3 oz fresh, unpasteurized apple cider
🔸 .25oz Allspice dram or 4 dashes Angostura bitters
🔸 .25oz 1:1 honey simple syrup
.
Infuse celery root in spirit for at least 3 hours. You must use celery root, it has a depth of flavor that is more earthy than the fresh celery and it works so well in this drink. Add all ingredients to a shaker with ice. Shake, strain, and serve on ice with a rim of allspice

  • One of the best things about doing this cocktail Instagram is that I get to try some really unique spirits and flavors from around the world. I received a bottle of @drinktrakal, a Patagonian spirit made with native maqui berries, murta berries, sauto berries and a long list of Patagonian foliage and herbs.

Over the last few days I've started listening to the Great Courses lecture on "Food: A Cultural Culinary History" by @kenalbala, so tinkering and testing cocktails with this spirit full of new-to-me flavors has been really satisfying as this course describes so many ingredients and processes I've never encountered. There are so many extinct herbs that were a part of previous civilizations... At least we are lucky enough to try some flavors from different parts of the world we live in now!

Also for this drink I used some fresh-pressed cider from my in-laws house at Christmas in Indiana.

🔸Black pepper rim for garnish

Add all liquid ingredients to a shaker with ice. Shake, strain, and serve in a lowball with a rim of black pepper. (I use a dollop of honey to get the coarse pepper to stick to the glass in a square design!)

  • In honor of NYE, today I’ve got a spicy punch to celebrate the end of 2019 with frozen festive ice molds. 🎉 When I was working through rounds of recipe testing, my dear friend Logan asked me if this recipe was one by Julie Reiner who opened the beloved Clover Club cocktail bar in Brooklyn. A higher compliment cannot be given to a drink so I decided it was finished and named the drink after her bar.

🥥Coconut Club🥥
☝️Also works with: light Rum
🔸2oz tequila muddled with a small slice of serrano pepper
🔸.75 orange liqueur (Triple Sec, Grand Marnier, etc.)
🔸1oz lime juice
🔸.25oz simple syrup
🔸1oz coconut water
🔸1oz coconut milk (Beverage like Califa Farms, not from a can)
🔸Small splash of cranberry juice

If you’re making a single cocktail, add all ingredients to a shaker with ice, shake, strain and serve. If you’re making a punch, just use cups instead of oz and build your drink in a pitcher and chill the ingredients before adding to punch bowl with floating ice molds.

🍒Sneaky Peat🍒
-2.25 cups of Scotch
-2.5 tablespoons of Angostura bitters
-2 cups chilled oolong tea (6 tea bags + 2 cups water steeped 8 hours)
-1 cup plus two tablespoons chilled cranberry syrup
-.5 cup water
-.75 cup fresh lemon juice

🍒Cranberry Syrup🍒
-1 cup water
-1 cup sugar
-1 cup fresh or frozen cranberries
-1 tablespoon Scotch
.
(Makes 12 servings) Add all ingredients to a punch bowl and stir. (For even better results, add all ingredients in a pitcher and chill in the refrigerator up to 2 days.) Serve in punch cups garnished with cranberries. For even better results, make an ice ring with garnishes and place the ring in the punch bowl.
