After doing some research on foraged foods for bitters, liqueurs, and tincture ideas, one of my favorite flavors to toy with recently is Douglas fir pine. I made a liqueur out of the needles and it’s been such an interesting addition to traditional cocktails.
?Pine and Tonic?
?2oz gin
?.5 oz Douglas fir vodka
?Tonic water
?Douglas Fir Vodka ?
?3 handfuls Douglas fir needles
?2 small Douglas fir stems
?~700ml vodka
Blend needles with vodka and let sit for 4 days. Filter through coffee filter and keep in cool, dark place up to 6 months. (Or you can just let the needles sit in the vodka without blending.)
