This year the “Queen’s Official Birthday” happens to fall on the same day as World Gin Day and the folks at @boodlesgin asked me to create a cocktail in her honor! Between my watching and re-watching “The Crown” on Netflix + the royal wedding, it’s been so fun to make this series of cocktails inspired by the monarchy over the last couple months.
When I was trying to decide on the ingredients for the drink, I wanted to create something that was referential to all things proper and classic, but with a modern, thoughtful twist. Since it’s Queen Elizabeth’s 93rd birthday, I thought it would be fitting to make a riff on the classic French 75 with its celebratory champagne. Lately I’ve also been really fascinated with the fact that the UK began growing saffron again so I infused some saffron in the gin to represent that new British industry. With some celery and rose and a bit of lemon to balance out the whole drink, I was surprised by how this combo of ingredients came together into something light, delicate, and nuanced. (And that golden hue definitely makes it feel extra regal!)

Ingredients
- 1.5 oz saffron-infused Boodles Gin
- .75 oz simple syrup
- .75 oz fresh lemon juice
- 1 dash celery bitters
- 1 dash rosewater
- top with champagne
- mint, edible flowers for garnish
Instructions
Add all ingredients except champagne with ice and shake. Strain into a wine glass, coupe, or silver goblet! Top with champagne, garnish with summer flowers and mint.
