A shrub is a colonial-day drink made of fruit, vinegar, and sugar. (Thomas Jefferson was a big fan!) Usually you use a lot more sugar and let the fruit sit for a week but it’s also delicious this way. It’s an incredibly refreshing drink that is tart and sweet at the same time, so good to sip in the spring sunshine. ?

Ingredients
- 2 slices kiwi
- .5 oz simple syrup
- .75 oz apple cider vinegar
- seltzer to top
Instructions
Muddle the kiwi with simple syrup and vinegar and then pour seltzer on top! A mocktail from the book Shrubs by Michael Dietsch-- so many summer cocktails inside! Definitely recommend using straws with this drink-- when you get chunks of kiwi it's like the sensation of bubble tea.
